Recently I attended an exclusive Wine Access event at Eleven Madison Park with host Chef Daniel Humm and Wine Director Gabriel Di Bella. Chef Daniel Humm’s creative genius has earned Eleven Madison Park three MICHELIN stars. The exquisite plant-based meal was paired with a series of wines curated by the restaurant’s wine director Gabriel Di Bella. The evening was an unforgettable and magical experience.

A few highlights of the wine and food pairing were the 2020 Trimbach Riesling Reserve from Alsace paired with Matsutake Mushroom Rice Porridge with Pine & Ginger The crisp Riesling had a lot of power and its freshness made it an amazing pairing with the Matsutake Mushrooms. The 2015 Remelluri Rioja Reserva paired with Fried Kabocha Squash with Habanada Pepper and Shiso were a match made in heaven. The tannins in the Rioja were present but refined by a longer barrel aging, it was a great ally to balance the texture of the squash. The blend, dominated by Tempranillo, provided spicy flavors that complemented the hints of Habanada Pepper and Shiso in the dish.
