
At the edge of the Wairau River is a special place for growing grapes. A place where soil, climate and terrain combine to help produce outstanding wines. Phil and Chris Rose established their vineyards here in 1978, today the extended Rose family produces some of the best wines that Marlborough has to offer.
The river is constantly moving and changing, reminding you that life is imperfect and moves fast. Because of these unpredictable times, Wairau River wants to remind us that there is always time to unwind, unplug and head outside.

Marlborough’s warm days and cool nights create an extended growing season allowing the grapes to develop beautiful acidity which balances the intense varietal characteristics of ripe grapefruit, white nectarine and tropical fruits resulting in an elegant, refreshing, crisp flavorsome wine that distinctly says Marlborough Sauvignon Blanc. Try this wine with BBQ chicken and sweet and chili sauce.
BBQ Chicken Salad with Sweet Chili Sauce
Serves 4 generously
Ingredients
6 chicken thighs (boneless & skinless)
4 cloves garlic
2 stalks lemongrass
4 tbsp fish sauce
2 tbsp soy sauce
1 tbsp palm sugar
Pound lemongrass, sugar, garlic, in a mortar and pestle, add soy & fish sauce. Marinate chicken thigh for a minimum of 2 hours, then BBQ slowly on low heat.
Salad Ingredients
Bean sprouts / tomatoes / spring onions / lettuce / radish / cucumber / coriander / mint / toasted sesame / toasted peanuts – Mix together in a bowl ready to add dressing and cooked chicken.
Sweet Chili Dressing
1 cup palm sugar
Knob ginger
1 clove garlic
2 long red chilis
1/2 cup white vinegar
2 tbsp fish sauce
Juice of 1 lemon or lime
Pound ginger, garlic, palm sugar and chili until smooth. Add vinegar, fish sauce and lime juice. Toss dressing through the salad, cut chicken on a diagonal and place on top of dressed salad. Serve immediately with a glass of Wairau River Sauvignon Blanc! Cheers!
